HISTORY
The Cave/wineshop was bought in April 2005 by Mitch O'Sullivan . Born in Cork, Ireland, Mitch travelled the world since the age of 6, and has now finally settled in France.
With a deep passion for French wines for nearly 20 years, Mitch decided to live her dream and spent an intensive year studying oenology (the study of wine) and viticulture (the study of grapes and the growing of grapes) full time at Chateau La Tour Blanche, Sauternes, qualifying with a Baccalaureat Professionnel in 2004. A further year at Bordeaux University in 2006 saw her qualifying with a DUAD diploma. (Diplôme d’université d’aptitude à la dégustation des vins).
Following this, Mitch continued her studies with WSET (Wine & Spirit Education Trust) in the U.K. by correspondence, with exams in London, and is now waiting for her final results for her diploma in Wines & Spirits of the world. In August 2010 she will be applying for her Master of wine – which will entail at least another 3 years of studying.
